In the summer, I love to have a fresh salad or a bowl of fruit for dinner. There’s just something about the heat that makes you crave a light meal, right? Or maybe it’s the thought of having to be in a swimsuit. Ha! This salad has been one of my favorites lately so I thought I’d share it with you I usually have a bread roll with it because I love my carbs 🙂

Ingredients:

Spring Salad Mix

Cooked Chicken Breast

Raspberries

Mango

Roasted Pine Nuts

Shaved Parmesan Cheese

Champagne Dressing

Olive Oil

Lemon Juice

Pepper

Directions:

Toss the salad with champagne dressing, a drizzle of olive oil, a bit of lemon juice, and pepper (all to taste). Add the sliced and peeled mango, raspberries, roasted pine nuts, and shaved parmesan cheese. Toss to mix it up and top with sliced, cooked chicken. Serve with a bread roll and enjoy 🙂
